One of my favorite activities is baking!! I love baking pretty much anything – cookies, cakes, pies, etc. I see it as a way to relax and there’s yummy stuff when you’re done (smile). I learned most of my baking skillz from my grandmas and so I’ve always felt a special connection with them through my baking.
Today I thought I would share my Triple Chocolate Cookie recipe. If you know someone who loves chocolate these cookies are the perfect treat! I think the name pretty much says it all (smile).
1 ¼ cups all purpose flour
1 tsp baking powder
½ tsp salt
¼ tsp baking soda
2 Tbs cocoa powder
1 tsp instant espresso powder
8 Tbs unsalted butter (1 stick)
6 oz bittersweet chocolate, finely chopped
2 large eggs
1 large yolk
1 cup firmly packed light brown sugar
2 tsp pure vanilla extract
6 oz semi-sweet chocolate chips
6 oz white chocolate chips
Whisk the flour, baking powder, salt, baking soda, and cocoa together in a medium bowl. Melt the butter in a saucepan over medium heat. Remove the pan from the heat, add espresso powder and bittersweet chocolate. Stir until melted. Set aside to cool.
Whisk the eggs, brown sugar, and vanilla together in a medium bowl, then slowly whisk in chocolate mixture. Stir in the flour mixture to make a loose dough. Don’t overwork the dough. Fold in the chips. Cover with plastic wrap and refrigerate until firm, approximately 1-2 hours.
Preheat oven to 350 degrees.
Line a baking sheet with parchment paper. Form dough into balls, about 2 inches each and put on the prepared baking sheets. Bake until the outside is crackly, but the center is still moist – about 13-15 minutes. Cool on a rack.
