I have a confession to make – I’ve always wanted to be a bartender. I think it’s more the social aspect than the alcohol itself that intrigues me – I mean just think of all you’d get to see from behind the bar! So every once in a while I like to pretend that I know what I’m doing (even though I definitely don’t) and shake things up (ha). So when I saw this week’s project for the Creative Collective (thought up by the lovely Melissa over at the Nectar Collective) I was definitely game- “Create a new cocktail recipe. Give it a fun name and serve it to your friends if you can!”
I was very excited for this challenge, but then I got home after two weeks in Alabama and realized that my poor liquor collection and pantry/fridge are all in dire need of replenishment! I’m usually more of a wine girl myself but the one liquor that I always have on hand is rum. Dark rum, light rum, coconut rum, pineapple-peach-mango rum, you get the idea (smile). So I surveyed my options and decided to get super creative and put together a few things I did have in my sadly understocked pantry (because in typical fashion I’m putting off a trip to the grocery store for as long as possible). And thus Snowy Caribbean was born!
- 2 cups Vanilla Almond Milk
- 1/4 cup maple syrup
- 1/4 teaspoon vanilla
- 2 shots of rum (your choice)
Mix all together. Refrigerate or serve over ice.
Overall I was pretty satisfied with the results, but I think it would have been even better with a bit of Kahlua (putting that on the shopping list now). I think it would also be fun with a tropical rum and perhaps coconut juice instead of vanilla or maybe chocolate milk with a sprinkle of cinnamon – oh the possibilities!! Unfortunately I haven’t had much luck in finding a guinea pig yet, but maybe this weekend (smile).
*In the interest of full disclosure, I think I’ve pinned a similar recipe, which is probably why this combination occurred to me. But I didn’t go find the recipe, so I’m calling it original (smile).
